Carnitas

Ingredients
- 3–4 lb pork shoulder, cut in chunks
- Orange and/or lime juice; onion; garlic
- Cumin, oregano, bay, salt, pepper
- Enough water/lard to partially cover; tortillas and salsa for serving
Steps
1. Simmer pork with citrus, aromatics, and spices until very tender and liquid reduces, 2–3 hours.
2. Shred; crisp in a hot skillet or under broiler in its fat.
3. Serve in tortillas with onion, cilantro, and salsa.
