Cacio e Pepe

Ingredients
- 12 oz spaghetti or tonnarelli
- 1 cup finely grated Pecorino Romano (freshly grated)
- 1–2 teaspoons freshly cracked black pepper
- Kosher salt for pasta water
Steps
1. Toast pepper briefly in a pan; cook pasta in well-salted water until very al dente; reserve starchy water.
2. Make a paste of Pecorino with a ladle of hot pasta water.
3. Toss pasta with pepper and cheese paste off heat, adding water until creamy and emulsified (no scrambling).
4. Serve immediately with more pepper and cheese.
