Ingredients
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño, minced (optional)
- 1/4 cup cilantro, chopped
- Dressing: 1/3 cup olive oil, 1/4 cup red wine vinegar or lime juice, 1 teaspoon cumin, salt, pepper, pinch sugar
- Tortilla chips, for serving
Steps
1. Combine beans, peas, corn, pepper, onion, jalapeño, and cilantro in a large bowl.
2. Whisk oil, vinegar/lime, cumin, salt, pepper, and sugar; pour over and toss.
3. Chill at least 30 minutes; serve with chips.
