Ingredients

- 3 tablespoons niter kibbeh or oil + 2–3 tablespoons berbere
- 2–3 garlic cloves, 1 teaspoon ginger
- 2–3 cups water or broth
- Salt; injera or rice for serving
Steps
- Cook onion slowly in fat until soft and deeply golden.
- Stir in berbere, garlic, and ginger; cook until fragrant.
- Add lentils and water; simmer until thick and soft, 20–30 minutes.
- Season with salt; serve with injera or over rice.
