Ratatouille

Ingredients
- 1 eggplant, 2 zucchini, 2 bell peppers, 1 onion
- 4 tomatoes (or 1 can crushed) + 3 garlic cloves
- Olive oil, thyme, bay, salt, pepper
- Fresh basil
Steps
1. Sauté onion and peppers in olive oil; add garlic.
2. Add eggplant and zucchini with herbs; cook until softening.
3. Stir in tomatoes; simmer until stew-like and glossy, 30–40 minutes.
4. Finish with basil; serve hot or warm.
