Ingredients
- 1.5 lb chicken thighs, cut bite-size; scallion pieces optional (negima)
- Tare: 1/2 cup soy sauce, 1/2 cup mirin, 1/4 cup sake, 2 tablespoons sugar
- Salt; bamboo skewers (soaked)
Steps
1. Simmer tare ingredients until slightly syrupy; cool.
2. Thread chicken (and scallion) on skewers; season lightly with salt.
3. Grill over high heat, brushing with tare in the last minutes, until charred and cooked.
4. Serve with extra tare and shichimi if desired.
