Ingredients
- 2 tablespoons olive oil
- 1 onion, 1 bell pepper, sliced
- 3 garlic cloves
- 1 teaspoon cumin, 1 teaspoon paprika, chili flakes
- 1 (28 oz) can crushed tomatoes
- 4–6 eggs
- Salt, pepper, cilantro or parsley; bread for serving
Steps
1. Sauté onion and pepper in oil until soft; add garlic and spices.
2. Pour in tomatoes; simmer until thickened, 10–15 minutes.
3. Make wells; crack in eggs; cover and cook until whites set.
4. Garnish with herbs; serve with bread.
